It´s the most widespread raw ham in Umbria, its manufacture is situated in Norcia and subburbs at a higher altitude than 900mt. above sea level and is covered by the Protected Geographical Indication (PGI).
Once it was produced only during the winter, but nowadays the modern technologies make it possible to manufacture it the whole year. The swine legs, refrigerated for a full day, are trimmed the fat off, then salted and kneaded; the ham has to drain blood for 3, 4 weeks, depending on the weight. After, it is washed with warm water and treated with pepper and garlic. Finally has a 2-3 months maturation period.
Once dried, it undergoes the “plastering” process with acompound of suet (the suet process is the application of a layer of minced suet, salt and pepper, that regulates the meat´s evaporation and is like a plastering for eventual imperfections coming from the salting) and then follows the maturation for at least 15 months, at the end of which the ham undergoes an accurate examination and all qualities are controlled: the swine origin, the date of slaughtering, the weight, the form and the flavour. Once examinated, if the commission finds all requirements fulfilled, the fire stamp will brand the IGP NORCIA.
